Bartlett Farm Heirloom Tomato Salad

Now that I eat mainly salad for dinner, I've started to look for many different salad recipes!  Here's one that I love - Bartlett Farm Heirloom Tomato Salad.

Ingredients

  • 6 ounces of Spanish feat cheese, cut into 4 pieces
  • 1 teaspoon of sliced chives
  • 1/4 teaspoons of dried lemon zest
  • 1/ teaspoon of pink crushed peppercorns
  • 4 heirloom of sliced tomatoes
  • 1 tablespoon of Banyuls vinegar
  • 2 teaspoons of honey
  • 1 teaspoon of Dijon mustard
  • 1/4 cup of olive oil
  • 1 teaspoon of Nunez extra virgin olive oil
  • Sea salt and black pepper
  • 16 leaves of baby red oak lettuce
  • 16 leaves of baby red leaf lettuce
  • Fried shallot rings
  • basil oil

Direction

  1. Preheat the oven to 400 degrees.
  2. Slice the tomatoes, mix the honey, mustard and vinegar together and whisk in the olive oil.
  3. Season the tomato slices with salt, pepper and Nunez olive oil
  4. Season the feta cheese with dried lemon zest, pink peppercorn and chives
  5. Bake cheese for 2 minutes
  6. Dress lettuce with vinaigrette and season with salt and pepper
  7. Add fried shallots and basil oil
  8. Place tomatoes on the plate, then the feta cheese on top
  9. Finally, put the baby lettuce and shallots on the very top
