Bartlett Farm Heirloom Tomato Salad

Now that I eat mainly salad for dinner, I've started to look for many different salad recipes! Here's one that I love - Bartlett Farm Heirloom Tomato Salad.
Ingredients
- 6 ounces of Spanish feat cheese, cut into 4 pieces
- 1 teaspoon of sliced chives
- 1/4 teaspoons of dried lemon zest
- 1/ teaspoon of pink crushed peppercorns
- 4 heirloom of sliced tomatoes
- 1 tablespoon of Banyuls vinegar
- 2 teaspoons of honey
- 1 teaspoon of Dijon mustard
- 1/4 cup of olive oil
- 1 teaspoon of Nunez extra virgin olive oil
- Sea salt and black pepper
- 16 leaves of baby red oak lettuce
- 16 leaves of baby red leaf lettuce
- Fried shallot rings
- basil oil
Direction
- Preheat the oven to 400 degrees.
- Slice the tomatoes, mix the honey, mustard and vinegar together and whisk in the olive oil.
- Season the tomato slices with salt, pepper and Nunez olive oil
- Season the feta cheese with dried lemon zest, pink peppercorn and chives
- Bake cheese for 2 minutes
- Dress lettuce with vinaigrette and season with salt and pepper
- Add fried shallots and basil oil
- Place tomatoes on the plate, then the feta cheese on top
- Finally, put the baby lettuce and shallots on the very top
