Easy No Cook Meals

When it’s hot outside or when you just want something simple and easy to make, try these no cook recipes for a quick meal. Made with just a few simple ingredients, they don’t require you to heat up the kitchen and can be put together in minutes.

Keep these no-cook meal options healthy by using low-fat and low-sodium ingredients wherever possible and when using oil, keep it to a minimum.

- Combine marinated artichoke hearts (drained and chopped), capers (rinsed and drained), Swiss cheese cubes, chopped red onion, and chopped apples. Toss with some oil from the artichoke hearts and some chopped fresh dill. Mix together completely and make individual servings by stuffing mixture in hollowed out sourdough rolls and serve along with a simple salad of baby spinach leaves and sliced cucumbers dressed in olive oil and vinegar.

- Combine some canned salmon (drained and flaked) with capers, dried tarragon, avocado cubes, chopped radishes, red wine vinegar, and olive oil and serve over a mixture of shredded cabbage and spinach leaves. Serve some baked pita chips on the side.

- Use some store bought prepared rotisserie chicken for this easy no cook meal. Shred some of the chicken with a fork and combine with chopped red bell pepper, minced fresh dill, lemon zest, and sour cream. Place the mixture in a quartered tomato and top with a sprinkling of pine nuts. Serve with pear slices tossed with a little honey, chopped fresh mint, and some cinnamon.

- Make a layered sandwich with baked, flavored tofu (sliced), pear slices, pitted black olives (sliced), thinly sliced cucumbers, and a drizzle of balsamic vinegar. Serve this easy sandwich with some shredded cabbage and diced apples tossed with a little olive oil and salt and pepper.

- Make a layered salad with mixed salad greens, sliced cheddar cheese, tomato slices, basil leaves, a drizzle of toasted sesame oil, and a sprinkle of lemon zest. Add some flavorful toppings of chopped nuts, diced red radish, and some crumbled goat cheese. Serve salad with flavored breadsticks or slices of rye bread or rye crackers.
