We discovered my son was a Vegetarian at the very young age of two. As meat eaters the first thing we asked the pediatrician was what do vegetarians eat? It seems like such a silly question now because we have learned over the years that creating easy vegetarian meals are a lot easier than you think. Here is our simple “What Do Vegetarians Eat” Guide

You don’t have to sacrifice taste or texture when creating vegetarian meal ideas. Creating a “meatless” lifestyle can be achieved with some simple substitutions.

* Temphe -soybean based gives you the meat texture

* Taste – We use Tofu the most. Its easy to find and offers a great variety to your meal.

* Beans ” O.K. not only cheap but the possibilities are endless with the many variety of beans available

* Flavor and Snacks – Use Nuts, adds flavor to your meal or holds you over until dinner time

* Legumes – focus on what’s in season to create the “cheap” vegetarian meals

Having basic foods that Vegetarian eat on hand will only help you with cooking or meal planning. Here are a few of the things we always have in the pantry or fridge:

* vegetables and fruits – purchase whats in season to save money

* seasonings – this is where you can get flavorful

* noodles or pasta

* brown rice and white rice

* whole grain cereals

* nuts and seed

* black beans, red beans or any variety but lots of beans

Get creative. These are just a few examples of what we use when creating easy vegetarian meals. Try different items and recipes to get a variety of new vegetarian meals. And if like my son dairy is also excluded from the diet, there are so many soy based substitutions available for that as well.

Along with fresh fruits and veggies taking a trip through your local health food store will guide in the right direction in creating easy meals for vegetarians.
