Grilled Salmon With Grilled Vegetables and Herb Vinaigrette

Do you love grilled salmon? This is yet another lovely recipe for you all to try! What a delicious dish and it's such an easy recipe!
Ingredients
Salmon and Vegetables
- 4 de-boned salmon fillet
- 1 thinly sliced fennel bulb
- 2 lemons squeezed for its juice
- 2 leeks
- 2 small carrots
- 4 tablespoons of olive oil, kosher salt and freshly ground pepper
- 1 pound of French green beans
Herb Vinaigrette
- 1 tablespoon of chopped chives
- 1 tablespoon of chopped Italian parsley
- 1 tablespoon of chopped chervil
- 1/3 cup of rice wine vinegar
- 1 cup of olive oil, salt and freshly ground black pepper
Directions
- Grill needs to be on high (charcoal grill works the best)
- Coat olive oil on both sides of salmon fillet
- Add salt and pepper for taste
- Toss vegetables with 2 tablespoons of olive oil and lemon juice in a large bowl
- Place vegetables in the grill pan for 10 minutes
- Grill salmon on medium to high heat for 4-6 minutes
- Flip the salmon on the other side and grill for another 2-4 minutes
- Put salmon and vegetable on plate and drizzle with the vinaigrette
