Roasted Yam and Onion Dip

Yummy! This is really good so try it when you have time! Another great recipe from An Easy Recipe!
Ingredients
- 1 yellow onion
- 2 tablespoons of olive oil
- 2 medium sweet potatoes or garnet yams
- 6 cloves of garlic
- 2 tablespoons of tahini
- 2 teaspoons of natural cane sugar
- 1 teaspoon of fresh lemon juice
- 1/2 teaspoon of salt
- 1/8 teaspoon of black pepper, dash of cayenne pepper, olive oil and toasted pine nuts
Direction
- Put 1 teaspoon of olive oil onto a large baking pan.
- Put sweet potato or yam and onion pieces onto oil pan.
- Wrap garlic cloves in a piece of foil and add to pan
- Put in the 400 degree F preheated oven and roast for 45-50 minutes
- Remove from pan to cool when yam is tender and onions are golden brown.
- Scrape yam pulp into a food processor when cooled and discard the skins
- Peel skins from onions and garlic
- Add all ingredients and blend until everything is smooth
